How To Meal Plan Like A #BossBabe

How does a boss babe meal plan? I don’t know about you, but it’s near impossible for me to cook every night. And believe me, I’ve tried my gosh darn hardest. Alas, it was not realistic with my full time job, exercise regime, blogging, other chores and social life. So I figured out a meal planning strategy that worked best for our schedule.

  1. Each weekend, decide on 3 main dinner meals.  Think a meat, a starch and veggies for every meal.  For example, one of our go-to’s is jerk chicken, sauteed cabbage and “rice and peas” (which is a Caribbean dish with rice and beans, not green peas).  We also love one-bowl meals like a pesto penne pasta with chopped up pieces of roasted chicken breast and veggies (like mushroom, zucchini and cherry tomato) all mixed in.
  2. Make your grocery list based on the ingredients you need for these 3 meals.  Throw in some breakfast or snack items like granola bars, bananas, oatmeal, smoothie ingredients … whatever’s your fancy.  Jett and I intermittent fast so we do not eat a typical breakfast, but a piece of fruit like a banana or an apple later in the morning.  However we do eat breakfast on the weekends, so I always make sure to grab some eggs, hashbrowns and sausage.  Yum.
  3. Plan to cook 1 meal every-other day, as opposed to everyday.  I try to stick to cooking on Sunday, Tuesday and Thursday.  Notice that I said “plan” to cook.  You’ve gotta be flexible in case higher priorities come up.  If you miss a day, no biggie!  Cook the next day instead 🙂
  4. Eat the leftovers the next day.  I know there are some of you out there who refuse to eat left overs, so this strategy may not work for you … but you’ve gotta make some sacrifices if you’re a boss babe who wants it all! When planning / cooking a meal, make enough of the 1 meal for at least 2 dinners.  Eat one batch tonight and the next batch tomorrow night. If you’re lucky, you’ll have enough to take for lunch after your 2 dinner meals.

And that’s how we do it!  Note that we do end up eating out for lunch 2-3 times a week, but at least we get to come home to a nice home-cooked meal.  How do you meal plan?  Do you have any tips?  Let me know!
